Delicious Pineapple Chicken Recipe
My family eats a lot of chicken for dinner so I am always working on new recipes to keep it interesting. Fresh ingredients always makes delicious foods so I always try to incorporate fresh fruits and vegetables into a chicken recipe to make a yummy dinner.
This pineapple chicken recipe is adapted from a chicken dish we had in Hawaii a few years ago. It is a little bit Asian with its sauce and a little bit Hawaiian with the pineapple flavor.
Ingredients:
6 chicken thighs or chicken breasts (whichever you prefer)
1 teaspoon of paprika
1 teaspoon of salt
1 teaspoon of pepper
1 tablespoon of terriyaki soy sauce
1 fresh small pineapple sliced
1/2 a cup of pineapple juice
1/2 teaspoon of minced garlic
1 teaspoon of honey
optional: 6 strips of bacon - turkey bacon is a good substitute to get the smokey flavor and keep it ultra healthy
Place the chicken pieces into a pan lined in foil, sprinkle paprika, salt, and pepper over the chicken pieces. Drizzle the honey and terriyaki sauce over the chicken and spread the minced garlic over the chicken. Place the bacon slices on top of the chicken and the pineapple slices on top of the bacon strips. Bake the chicken at 425 degrees for 45 minutes.
Serve with brown rice and sauteed spinach.
