Indianapolis 500 Race and Lemonade Popsicles


A Memorial Day treat for the kids:

Today is one of those perfect California days. The weather has been touch and go for a few weeks with rain and 60 degree weather, but as we approach Memorial Day, summer seems to be arriving. While you are watching the Indianapolis 500 Race today, a great activity for your kids could be making some fresh homemade lemonade and popsicles so they can go outside and play and have a cool treat while you are inside watching the race.

Here is our recipe for Raspberry Lemonade and Lemonade Popsicles:

7 medium lemons
simple syrup
1 pint of raspberries

Juice the 7 lemons and put the juice in a pitcher.
Make simple syrup by using 1 cup of sugar and adding 2 cups of water and boiling it until it becomes a thick sugar syrup.
Take a pint of raspberries and crush into the lemon juice and add the simple syrup.
Add water until the pitcher is 3/4 full and add some ice to cool the lemonade.

The lemonade will turn a pinkish color. Serve in glasses with garnish of mint and small wedges of lemon or raspberries.

For the lemonade popsicles, simple pour some lemonade into ice trays and freeze or into some lemonade molds. We used these rocket lemonade molds we bought in Sonoma a few years ago.
